Homemade Ice Cream Sandwiches

This is the first recipe of Bake It Up with Dee and where it all began! These are super simple to make and even more delicious to eat!

Cookie Recipe:

  • 1 cup butter
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar
  • 1 tsp. vanilla extract
  • 2 eggs
  • 2 1/4 cups flour
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 2 cups chocolate chips
  • your choice of ice cream (I used cookies and cream)
  • sprinkles and chocolate chips (or your favorite toppings)

Combine butter, sugar, brown sugar, and vanilla extract in mixer. After combined, add eggs. In separate bowl, mix together flour, baking soda, and salt. Slowly incorporate the dry mixture into the wet mixture. Then add chocolate chips. Scoop out cookie dough onto ungreased cookie sheet in 2 tbsp. scoops. (I use an ice cream scoop to keep the portions similar!) Bake at 350 for 7-8 minutes. Let cool before adding ice cream!

Put it all together!

I found that the best way to get your ice cream into the right shape, was to grab two small plates and squish the ice cream into a disc shape. After this, you place the ice cream disc onto one cookie and place the other cookie on top. If you want to fill in the sides, for the most ice cream possible, take a small spatula and push some more ice cream into the sides.

Decorate!

After your ice cream sandwich is put together, find some sprinkles and jazz it up! I took the sprinkles and put them on a plate and then slowly rolled the side of the sandwich in the topping. You can also switch it up and roll your sandwich in chocolate chips, nuts, or any other topping your heart desires!
