Cookie Dough Cupcakes with Cookie Dough Flavored Icing

Ingredients:

Cupcake Ingredients:

  • 1 yellow boxed cake mix, prepared
  • chocolate chip cookie dough

Icing Ingredients:

  • 1/2 cup unsalted butter, softened
  • 3/4 cup light brown sugar
  • 1 tsp. vanilla extract
  • 1 1/4 cup flour
  • 1/2 tsp. salt
  • 4 Tbsp. milk
  • 1 cup of mini chocolate chips

How to Make:

Cake and Baby Cookie Instructions:

  1. †Make your box cake mix as instructed on box.
  2. Take a medium ice cream scoop to fill your cake batter into cupcake pans that are lined with cupcake tins.
  3. Use a small ice cream scoop to spoon out cookie dough and roll them into balls. Then split them in half.
  4. Make enough balls to fit into each cupcake. Then press each of them down into a cupcake.
  5. Use small ice cream scoop again and split cookie dough balls into eighths to make baby cookies for the top of your cupcakes.
  6. Bake cupcakes as directed on box and bake baby cookies for 3-5 min or until golden brown.

Icing Instructions:

  1. Cream together butter and sugar in mixer on medium speed.
  2. Add vanilla and mix together.
  3. Add flour and salt and mix until combined.
  4. Add milk gradually until it looks like cookie dough! (and frosting! at the same time!)
  5. Fold in chocolate chips

Put it all together:

Let your cupcakes cool before icing them, or you’ll have a leaning tower of melting cookie dough, and that’s never fun! Ice your cupcakes and make ’em look real cute by topping with a baby cookie and mini chocolate chips. Also, if you have any leftover icing, stick that stuff in the refrigerator and eat it with pound cake or anything you want to taste more yummy than it already is! The best part about the icing is no salmonella!
