Berry Peach Cobbler

At the beginning of July, my extended family all went to the lake for the weekend! Every year, when we visit the lake, my grandma, aka my Nina, always makes berry peach cobbler in mass quantities. Though we made enough cobbler to feed around 20 people, I’ll be giving you the recipe to feed about 6-8!

Ingredients:

  • 1 cup self-rising flour
  • 1 cup sugar
  • 1 cup buttermilk
  • 1 Tbsp. vanilla extract
  • 1 cup water
  • 1 small strawberry gelatin packet
  • 1 cup berries of your choice (my grandma usually uses fresh blackberries, but this time, we used a frozen berry mix)
  • 1 can canned peaches, diced
  • 1 stick butter
  • Vanilla bean ice cream

How to Make:

  • In 9×13 baking pan, mix flour and sugar together. Pour in buttermilk and vanilla and mix until combined.
  • Boil a cup of water in the microwave and then pour gelatin packet in and mix together.
  • Pour the berries and peaches into a bowl and then pour the gelatin over the top and mix together.
  • Pile the gelatin/fruit mixture into the middle of the pan.
  • Cut the butter up into cubes and put all over the top of the cobbler.
  • Bake at 350 for 40-50 minutes or until golden brown.
  • Serve the cobbler warm with vanilla bean ice cream and enjoy!
